Danny Parrott is looking forward to embarking on his new role as
General Manager of The Cork and Barrel, Western Springs' new
neighborhood wine shop. The Cork and Barrel is located at 800
Hillgrove Avenue and is expected to open in early November 2006.
Danny's passion for wine has been the focal point of his retail
and restaurant career. Beginning in 1994, while working for
Lettuce Entertain You Enterprises, Danny managed the wine programs
at Scoozi! and the Foodlife Market in Chicago. Most recently,
he served as General Manager and Wine Buyer for Lake Forest Food
and Wine and the Wine Discount Center of Highland Park.
Due to his many years in the industry and his enthusiasm for
wine, Danny has developed a sharp palate and vast knowledge of all
grape varietals and growing regions. Through continuing
education, wine seminars and wine publications, he keeps up on
current vintages and trends in the wine world to better serve his
customers. Danny's philosophy is based on providing a
selection of wine for every palate, asking the right questions and
listening to his customers in order to send them home with the
perfect wine to fill their needs or match their menus. Danny, his
wife Sofia, and their son Jack live in the area and have been part
of the community for several years. Sofia grew up in Western
Springs and now works in her family's business in town. They
are excited about the opportunity to bring this great concept to
the neighborhood.
